13 Nights of Halloween: Pumpkin Spice Rice Krispies

I was doing my usual Target run when I found a bag of Pumpkin Spice flavored marshmallows and knew I needed to make something out of it.

The marshmallows were cut into pumpkin shapes so they would’ve been a cute garnish or a cupcake topper. But the marshmallows in this bag were a bit smashed and it was the last one in the store. Bummer. And then it hit me, Pumpkin Spice Rice Krispies Treats!

It’s a very simple recipe and with very minimal ingredients.

All you need are:

  • 3 Tablespoons of butter
  • 1 bag of Jet-Puffed Pumpkin Spice Mallows
  • 6 cups of Rice Krispies cereal

First, melt the butter in a large saucepan over low heat. Add in the whole bag of the marshmallows. I added about a cup of regular mini marshmallows for a more marshmallow-y mixture. Once completely melted, I added a few drops of orange food coloring for a richer orange color. Remove from heat.

Mix in the Rice Krispies cereal and stir until well coated.

Press the mixture into a greased baking pan and let cool before cutting.

(Optional) Melt some white chocolate for a chocolate drizzle. I melted mine with my Wilton Melting Pot.

I used a ziplock as an icing bag and just drizzled the entire pan before cutting. I also sprinkled with chocolate sprinkles.

And that’s it! Easy right? This version of the traditional Rice Krispies Treats is perfect for the fall season. I am currently giving myself a mental note to find more of these marshmallows!
